The medium roast has a nice dark chocolate flavor, but it incorporates more of a nuttiness to it than the dark roast. With a little sweetener, the dark roast tastes like a dark chocolate bar with a high percentage of cacao. Neither roast presents as "bitter" in that the flavor does not linger on the taste buds with any harshness. If anything, it prompts one to drink some more to keep the flavor present. BUT if you don't like chocolate with bitterness in it, you may want to move toward a lighter roast.
