Bacon Wrapped Choffy Crusted Filet Mignon

The PERFECT steakhouse style cut that is dressed to impress. Because bacon+chocolate+melt-in-your-mouth steak will blow your mind. Valentine’s Day is quickly approaching, and I think you deserve to splurge on this crème de le crème of all beef cuts. And this fancy steak isn't just for Valentine's Day. We make this bacon wrapped filet Mignon as a great meal for any special occasion or a way for your dinner guests to experience this tender steak.

 

Ingredients for the Filets:

  • 2 tbs Ghee
  • 2 strips Bacon I used local pork belly (Whole30 compliant)
  • 2 6oz portions Beef Tenderloin

Ingredients for the Rub:

  • 1/4 cup Choffy
  • 1 tbs Black Pepper
  • 1 tbs Sea Salt
  • 1 tsp Ground Mustard
  • 1/2 tsp Dried Thyme

 

Instructions:

  1. Preheat oven to 400 F
  2. Combine rub ingredients together
  3. Rub fillets liberally with the mixture until it is evenly coated
  4. Wrap the fillets with bacon and secure with tooth picks
  5. In a cast iron skillet (or oven proof skillet), heat the skillet on medium high heat until it appears to be smoking
  6. Add the ghee and quickly but carefully add the steaks (facing away from you so you don’t splash yourself)
  7. Sear the steaks for about 45-60s on each side
  8. Turn off burner and transfer to oven to finish cooking (about 10-15 minutes) or until desired doneness
  9. Allow the steak to rest for 10 minutes before eating.

 

TIP: Steak is VERY temperature sensitive when cooking and does best when it is at room temperature prior to searing. Therefore, take steaks out of the fridge about 30 minutes before cooking
